We all know breakfast and brunch adhere to the rules of feminism and betchiness and parfaits are their crown jewel. They’re a welcome staple amongst these magical morning times, combining our love of Greek (or Icelandic) yogurt with fruit, nuts, and other healthy-ish shit.
A while back we gave you overnight oats, and parfaits are just as fucking great for your lazy weekdays or weekends due to their quick and effortless assembly. You’re welcome. This peanut butter and jelly version is a throwback which demands honorable mention to our grammar school days when Lisa Frank and Limited Too reigned supreme, Angelica Pickles was our role model for getting whatever we wanted, and Bath & Body Works Cucumber Melon spray coated our throats and lungs on a daily basis.
• 1 cup Greek plain yogurt or plain Icelandic Skyrr
• 1/3 cup chopped peanuts
• 1 tbsp peanut butter chips
• 1/3 cup raspberry or blackberry preserves
• Fresh raspberries and/or blackberries
Spoon half of the yogurt into a parfait glass or any glass you have laying around (yet another use for your pimp cup from your 21st birthday). Top with half the berries, followed by half the peanuts, half of the peanut butter chips, then half of the preserves. Continue layering with the remaining yogurt, berries, peanuts, chips, and preserves. Top with extra berries.
Like, what effort does this actually take? Pretty much none. Oh and it’s only like 240 cals, so say thank you, betches.
